1 tablespoon margarine
2 large onions, diced
1 green pepper, diced
1 cup celery, diced
1 clove garlic, minced
1 1/2 pounds ground beef
2 4 ounce cans mushrooms
15 ounce can tomato paste
15 ounce can tomato sauce
1 teaspoon vinegar
1 1/2 cups water
salt and pepper
8 ounce egg noodles
1 1/2 cups sharp cheese, grated

Preheat oven to 350║.
SautÚ onions, pepper, garlic and celery in margarine, add meat and brown well. Drain excess fat; add tomato sauce, paste, mushrooms, vinegar, water, salt and pepper. Add 1 cup cheese, cook into a rich sauce, about 45 minutes, stirring frequently. Cook noodles, drain and mix with sauce, place in buttered casserole dish, sprinkle with remaining cheese. Bake for about 1 hour.
