1 lb (or 2 packages) Farmer's Cheese
3 eggs (large)
3/4 c Farina
2 tbsp oil or 1/2 stick butter
1/2 tsp salt

1 c plain Bread Crumbs
2 tbsp butter
Vanilla sugar
Sour Cream (small container) or plain yogurt for less calories, also less flavor

In a medium size skillet, toast the bread crumbs in the butter to golden brown over low heat mixing often.
Put Farmer's cheese in a bowl and mash up well.
Add eggs, salt and Farina and mix together well with a wooden spoon.
Let it stand for 2-3 hours or over night, for Farina to soften.
On high heat boil water in a large pot (about 3 quarts) add a little salt.
Wet your hands with cold water and form a large spoonful of the Farmer's cheese mixture into a ball.
Place balls on a foil paper. It makes about 10 - 12 balls.
Drop the balls gently into boiling water, cook for 15 - 20 minutes, turning balls gently for both sides to be cooked. They will almost double in size.
Remove balls with a spoon and roll in bread crumbs.
On low heat, soften butter, add sour cream and 1 tbsp vanilla sugar. Let it warm up (if too thick you can add a small amount of milk).
Serve over dumplings. Sprinkle with more sugar on top.
