Orange Cake Recipe

1 cup cake flour
Pinch of salt
1 level teaspoon baking powder
6 to 8 eggs
1 cup sugar
1/4 cup orange juice
Rind of 3 oranges
Whipped cream

Sift together 5 times: cake flour, salt and baking powder.
Beat 6 egg yolks with 1 c. sugar until creamy. Add 3 T. "cold" water.
Beat 4 egg whites until stiff.
Add flour mixture plus 1 tsp. vanilla to yolk mixture.
Mix well.
Fold in egg whites.
Pour into 3 cake tins, lined with parchment paper circles.
Bake at 350 for 12 to 15 minutes.
Mix 1/4 c. orange juice & rind of 3 oranges, 2 beaten egg whites, and 3/4 cup sugar.
Pour over cakes and keep cold until morning.
Frost with whipped cream, slightly sweetened (depending on sweetness of oranges).
