3 fresh medium zucchini
1 cup of baking mix (e.g. Bisquick)
1/4 cup Parmesan Cheese
2 tsp. grated or minced garlic (fresh or from a jar)
1 egg (medium or large)

Mix all together and cook over medium/medium-high heat in a frying pan 'til deep brown (NOT "Kline brown" though!) Cook about 10 minutes

Grandmother Kline (nee Arnold) made these for our grandfather, William Bowman Kline. Times have changed, many no longer make with bacon fat! But a small amount of EVOO (I use my homemade rosemary-infused olive oil) will be healthier. 1-2 TBSP.
MODERN TAKES: Make them small (1/2 dollar sized) for appetizers with tartar sauce, or Greek yogurt dip (Plain yogurt, garlic, lemon juice, mint, honey, salt, pepper to taste) or even some blue cheese...
