18 Ounces Lettuce 3-oz. portion per salad
6 Each Boneless, skinless chicken
breasts (4-6 oz. each)
Grilled with cooking spray
2 Cups Granny smith apple Sliced, soaked in lemon
juice, 1/3 cup per salad
2 Cups Red Grapes Halved, 1/3 cup per salad
6 Ounces Blue Cheese Crumbled, or cut in small
triangles, 1 oz. per salad
12 Tablespoons Low fat balsamic vinaigrette Divided into 6, 2 Tablespoon
portions

Directions:
Directions:
1. Coat chicken breasts with cooking spray and season with salt & pepper. Place
on grill (see note), flipping once until chicken reaches internal temp of 165°F.
When cool, slice on diagonal.
2. Place 3-oz portions of lettuce in each Quik Pik container. Arrange chicken down
center of lettuce with cheese and fruit on sides. Place low fat dressing container
in lower corner. Cover and label.
Note: If grill not available; sear in non-stick pan 8 minutes on each side or until chicken
reaches internal temp of 165°F.
