3 Lbs Flank steak Thinly sliced strips
1 ½ Tsp Fresh ginger Minced
2 ½ Oz Soy sauce
2 Oz Egg white
4 ½ Oz Cornstarch
1 ½ Lbs Broccoli florets, fresh Blanched
13 ½ Oz Classic stir fry sauce
6 ½ Oz Water
¼ Cup Scallion Sliced thinly lengthwise

Directions:

1. Prepare beef. Wisk together fresh ginger, soy sauce and egg white, this is the
protein marinade. Toss beef strips with marinade. Cover and refrigerate 15 – 30
minutes. Remove beef from marinade, toss in cornstarch to lightly coat and
immediately deep fry. Cook until internal temperature registers 145°. Remove
from oil and drain.
2. Meanwhile, blanch broccoli in boiling water until bright green, no more than 3
minutes.
3. Whisk together classic stir fry sauce and water. Toss beef, broccoli and sauce
gently to coat. Hold hot for service at > 140°. Garnish with sliced scallions.
