2 ˝ Lbs Chicken breast, boneless,
skinless (or shrimp or tofu
cubes, as shown)
2x2 inch cubes
1 ˝ Tbsp Fresh ginger Minced
2 ˝ Oz Soy sauce
1 ˝ Tbsp Sugar
2 Oz Egg white
4 ˝ Oz Cornstarch
1 Tbsp Oil
1 Lb Bell pepper (green and/or red) 1x1 inch chop
20 Oz Ginger sesame sauce (see
recipe)
1 Tbsp Sesame seeds To garnish

1. Prepare chicken (or shrimp or tofu cubes). Wisk together fresh ginger, sugar,
soy sauce and egg white, this is the protein marinade. Toss chicken cubes (or
peeled shrimp or tofu cubes) with marinade. Cover and refrigerate 15 - 30
minutes. Remove protein from marinade, toss in cornstarch to lightly coat and
immediately deep fry. Cook until golden and internal temperature registers 165°
for chicken (155° for shrimp or tofu). Remove from oil and drain.
2. Heat oil in large sauté pan or wok over medium-high heat. Sauté bell peppers
until just tender (about 4 minutes), add cooked protein and sauce. Toss to coat,
cook 1 minute more and hold hot for service at > 140°. Garnish with sesame
seeds.
