3 Cloves Garlic - minced
1/4C Olive Oil
1 Baguette - cut into 3/4" pieces
Salad
3 Romaine Hearts - washed thoroughly in very cold water and cut into11/2" squares
3 Garlic Cloves cut in half
3/4C Olive Oil
1t Ground Pepper
1t Salt
2 Eggs - soft cooked for 1 minute
2 Eggs - Medium
3T Lemon Juice - fresh
1/2C Parmesan Cheese - freshly grated

Directions:
Directions:
1. Place the garlic in 1/4 C olive oil and let sit 1/2 hour. In a large bowl toss the bread pieces in the garlic - olive oil mixture. Preheat the oven to 425º. Bake the bread about 10 min until a golden brown. Put aside.
2. Rub the garlic cloves on the bottom of a large salad bowl - discard remnants of the garlic.
2. Prepare the Romaine lettuce - wash well in very cold water, dry thoroughly and place in the salad bowl - rubbed with garlic.
3. Sprinkle salt and pepper and then pour the olive oil over the lettuce,
4. Break the warm cooked eggs into the romaine. Add the lemon juice. Toss well.
5. Add croutons and parmesan cheese - toss again.
