9 large lasagna noodles
3 quarts boiling water
1 tsp. salt
3 tbsp. butter
1/2 c. minced onion
3 tbsp. flour
1 3/4 c. milk
2/3 c. chopped or dried parsley
2 c. low-fat cottage cheese or any kind of shredded cheese, divided for layering
2 c. or more coarsely chopped, cooked chicken, divided for layering

Directions:
Directions:
Cook noodles in water with salt until tender. Drain. Saute onion in butter for about 5 minutes. Stir in flour and milk to make a sauce. Add parsley. Grease a 9x13 casserole. Pour a little sauce on bottom of dish. Lay 3 noodles on sauce, cheese on noodles, more sauce and chicken chunks. Continue layering. Bake at 300º until bubbly.
