1/2 cup butter
3/4 cup sugar
1 egg
1/2 cup applesauce
1 mashed ripe banana
1 - 8 oz plain yogurt
1 cup flour
1 cup whole wheat flour
1-1/2 tsp. baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 cup chopped walnuts - optional

Directions:
Directions:
Preheat oven to 350 degrees cream butter and sugar until smooth. Add in banana, applesauce and banana - mixture will look curdled. Sift all dry ingredients together and then slowly blend into batter. Don't over mix. Pour into greased 9 X 9 X 3 inch loaf pan. Bake one hour or until tester comes out clean.

You can use 1/4 brown sugar and 1/2 white; also I use whatever yogurt I have on hand. Flavored makes the bread a bit more interesting, but doesn't alter the taste too much.
