3 eggs
1 cup oil
2 cups sugar
2 cups raw, peeled, and grated zucchini
3 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 T. cinnamon

Directions:
Directions:
Preheat oven to 325. Beat eggs; add oil, sugar, zucchini, and vanilla. Mix well. Mix dry ingredients together well, and slowly add to wet ingredients. Grease & flour two loaf pans. Evenly fill both loaf pans with mixture. Bake in preheated oven for an hour.
