1 T oil
1 to 3 T Red Curry Paste (more is hotter)
2 boneless chicken breasts or meat or fish of choice
1 onion diced
1 potato diced
1 sweet potato diced or 3 carrots sliced
1 C green beans or snap peas
1 can coconut milk

Directions:
Directions:
Heat oil in saucepan, cook curry paste in oil until fragrant. Add diced meat and cook, then onions and other vegetables. Add the can of coconut milk and stir to combine. Cover and cook on low until vegetables are tender. Enjoy!
