2 lbs. hamburger
1 tbsp. olive oil
1 small onion, diced small
1 stalk celery, diced
1 clove garlic, grated small or minced
1 tbsp. butter
salt and pepper to taste
2 tbsp. taco seasoning
1/4 c. water
1 can refried beans
2 c. cheddar cheese, grated
1 c. mozzarella, grated
1 c. pepper jack, grated
10 large tortilla shells

Directions:
In large skillet melt butter over medium heat; add veggies except garlic, cook until tender. Add oil, burger, garlic, salt and pepper, brown. Add seasoning, water and beans, mix until combined. Let simmer about 10 minutes. Grease 9x13 baking dish. Place 2 shells on bottom, overlapping in the center just slightly. Spoon in about 1/3 burger mixture, then 1/3 of each cheese. Keep layering with top being shells (try and tuck edges into pan) and then cheese.
Bake at 350º for 25-30 mins. or until top is golden and bubbly. Let cool about 10 mins. before serving. Cut into squares with knife is easiest.
Top with taco toppings such as salsa, sour cream, olives, tomatoes, ect.

Using a potato masher works well to break up hamburger while cooking.
