2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup shortening
1 cup sugar
1 tsp. grated orange rind
1 tsp. vanilla
1/2 cup orange juice
1/4 cup raisins
1/4 cup chopped nuts
1 cup finely chopped apple

Preheat oven to 350ºF
Sift flour, sift again with baking powder, salt and baking soda.
Cream shortening, add sugar gradually. Add egg and beat well. Blend in orange rind and vanilla.
Stir in dry ingredients alternately with the orange juice.

I boil the raisins until plump and cool well before adding them.
Add raisins, nuts and chopped apples with last addition of flour. Mix well. Batter will be stiff. Spoon into a greased 9x5 loaf pan.

Bake for 1 hour.
