Ingredients: Saute' till clear: 1 small onion, diced 3 ribs celery diced 1 tablespoon oil ( 2 strips of diced bacon optional)
add: 4 cups water 1 teaspoon salt 1 14 oz can chicken broth ½ teaspoon dried rosemary (crushed 1 ½ cup split peas, rinsed ¼ teaspoon dried thyme and pepper 3 bay leaves 2 diced carrots 1 cup cubed ham
Optional: ham hock or ham bone
simmer for 1 hour (stirring occasionally to prevent burning on the bottom of the pan) Add 2 diced carrots - cook for additional ½ hour Remove ham bone and salvage ham bits/pieces Add cooked ham back into soup.
REMOVE BAY LEAVES before serving

Directions:Rinse peas and place in a large pot.
Add saute'd veggies, chicken broth, and spices to the pot.
Simmer for 1 hour (stirring occasionally scraping the bottom to prevent burning).
Add 2 diced carrots - cook for additional ½ hour
Remove ham bone and salvage ham bits/pieces.
(Whisk or blend for a creamier soup.)
Add cooked ham back into soup. (add additional ham if desired)
