2 cups artichoke hearts quartered
2 cups plum tomato cored and diced
2 cups broccoli spear
1 cup broccoli rabe or broccoli
2 cup fennel sliced
1 tablespoon Feta cheese crumbled
6 fluid ounces Shallot Vinaigrette

Directions:

Combine cooked lentils, artichoke, tomatoes, broccoli, broccoli rabe, and fennel. Toss with vinaigrette and
garnish with Feta cheese just before service.
NOTES: Quik Pik Portion: 2 oz lettuce bed,10 oz of salad
