1 cup jicama julienned
1/3 cup hearts of palm sliced
2 whole mango diced
2 whole avocado diced
2 teaspoons olive oil
1 pound shrimp peeled, cleaned, sautéed
12 ounces arugula
6 fluid ounces Cilantro Cumin Vinaigrette

Directions:

Combine tomato, onion, jicima, heart of palm, mango, avocado, and sautéed shrimp. Toss with vinaigrette and
serve over arugula. Prepare just prior to service to ensure freshness.
NOTES: Quik Pik Portion: 1 oz greens with 9 oz salad
