2 teaspoons olive oil
2 cups snap beans sugar snap peas
1 each red bell pepper thinly sliced
12 ounces rice noodles
1 pound chicken breast grilled and julienned
6 fluid ounces Soy Mint Vinaigrette see recipe below
2 cups pineapple, small sliced wedges Pineapple added at the end to avoid pasty
chicken.

Directions:

Sauté sugar snaps and pepper in oil quickly. Toss with chicken and noodles.
Add vinaigrette and pineapple right before service. Garnish with Mint, Scallion, Peanuts
NOTES: for Quik Pik: 2 oz lettuce bed, 10 oz salad
