2 pounds butternut squash, peeled, seeded, and cut into chunks
1 medium onion
3 cups chicken broth
2 medium apples, peeled, cored, and chopped
1 can coconut

Directions:
Directions:
In medium stock pot, combine the squash, onion, and broth. Bring to a boil, then reduce heat, and simmer for 20 minutes. Add apple. Simmer for 10 minutes more. Blend in food processor, on puree. Return to pot. Stir in coconut milk. Return to pot. Return to a boil, then reduce heat to a simmer for 2 minutes. Serve hot
