Nancy Wrote: "This is the way we learded to make noodles, The measures are basic. cup your hands like a scoop. Depending on how many noodles you want to make, the recipe is: 1 scoop flour, 1 egg, and a pinch of salt. this makes about 2 cups of cooked noodles."

Basic instructions:
Mix ingredients together in a bowl or on a cutting board put flour making a well in the center and add the wet ingredients into the well. Fold the flour into the wet ingredients adding water until the dough sticks together but is not sticky. Knead the dough until it is very pliable keeping the surface lightly floured. Using a rolling pin, roll the dough out to 1/4 inch thickness.Dust the surface of dough and roll dough like a log or jelly roll then slice thin slices the length of the dough, seperate noodle strips and allow to air dry if you have time or plan to store them in the freezer use an air tight container after drying the noodles overnightand use within 3 months for best results. TO COOK: Drop noodles a little at a time into water or broth and cook until noodles are slightly transparent and tender. Our family loves chicken and dumplings with these noodles. I requested these honemade noodles in Mother's chicken and dumplings and her brown oven baked rice for my special Birthday meal every year. Mother lovingly continued this Birthday tradition every year until she was 74 with the exception of the 4 Birthdays I was living abroad (1986-1990) If I wasnt living close to home she would send me a Birthday package containing the ingreduents for my special Birthday meal, down to a box mux version of Mother's anglefood confetti cake and LOVE. My youngest son, Jason requested the chicken n noodles all his life and now his family enjoys them whenever we are in the same kitchen. Thank You Mother!
