potatoes, peeled, washed, and sliced into thin rounds
large block valveeta cheese, sliced about 1/8 in. thick
1 to 2 lbs bacon

Directions:
Directions:
This works best in a cast iron pan with lid. Place potatoes in "shingle" type layer to cover bottom. Next layer cheese so that potatoes are mostly covered. Continue layering until you have reached about 1/2 from top with potato as last layer. Now add bacon strips, over lapping just slightly, covering entire top. Cover and bake at 350º for about 1 to 1 1/2 hrs depending on size, or until potatoes are tender.
