2 lbs lean ground beef
OR a combination of
ground beef and ground buffalo, venison or elk.
For super lean chili substitute ground buffallo, chicken or turkey)
1 c each diced onion and bell pepper
2 medium fresh tomatoes diced
1 pkg Schilling chili spice blend
1/2 tea. Cepoltle chili powder
1 tblsp. Regular chili powder
1 tblsp sea salt
fresh ground pepper to taste
1 32oz can Bush's veggitarian style baked beans
1 ea 14oz of the following canned beans any brand drained: great northern, black, red kidney
1 can chili beans do not drain
1 14oz canned plain diced tomatoes
1 small can Ortega brand mild green chilis

Brown ground meat in large skillet. Sprinkle seasonings over meat stir and add peppers, onions and fresh tomatoes. Simmer until veggies are tender. Transfer meat mixture into a colander to drain off excess fat. In a large crock pot add canned tomatoes, green chilis, Bush's baked beans and chili beans, stir to mix and turn crock to high setting. Add drained meat mixture and drained beans. Stir until mixed thoroughly and cook on high for 30 minutes. Reduce to low setting and cook for 2-3 hrs or on low for 3-4 hours. As chili cooks you may need to add a small amount of tomato juice, broth or plain water to keep the chili from burning so check often to make certain they have enough moisture durring cooking time. If you are pressed for time the chili can be cooked on high for about 1 hour but if you have the time cooking chili on low develops a deeper richer flavor.
Serve with shredded cheddar and Monterey cheese, diced green onions, black olives and crackers or try making the cornbread recipe in the bread section.

Chris Chaffin gave me this recipe and the flavors remind me of the recipe from Mother using dried beans and soaking them overnight etc.. This canned bean version is a quick meal winner. Even Captain Kirk can make this chili perfect every time! Thank you Chrispy.
