4 lbs pork spareribs
1 c. white sugar
1 tsp. salt
1 1/2 tbsp. finely ground black pepper
2 tbsp. paprika
2 tbsp. garlic salt

SAUCE INGREDIENTS-
1/2 chopped onion
3 c. ketchup
3 tbsp. brown sugar
cayenne pepper to taste

Clean ribs, trim excess meat and fat. Remove membrane from back side of ribs. Stir together sugar, salt, black pepper, paprika, garlic salt and 1 tablespoon of cayenne pepper. Cover and refrigerate in a roasting pan 8 hours or
overnight. Preheat oven to 275F. Bake uncovered for 3-4 hours until ribs are up to temp. Remove 4 tablespoons pan drippings from the rigs and add onions in a skillet on medium heat. Cook until onion is tender and browned. Stir in ketchup and brown sugar, season with black pepper, salt and cayenne pepper to taste. Reduce heat and simmer for 1 hour adding water as needed. Grill ribs at 325 on bbq. Baste with sauce turning occasionally making sure sauce does not burn.
