2 lb. chicken breasts
2 cup soft bread cubes
1 cup grated cheese
1/4 cup melted butter or margarine
1 pkg. (10 oz.) frozen mixed vegetables (cooked)

CHEESE SAUCE:
1/4 cup flour
3/4 tsp. salt
1/4 tsp. pepper
1/4 cup melted better or margarine
1 cup milk
1 cup broth
1 1/2 cup grated cheese

Directions:
Simmer chicken in water for 1 hour, or until tender. Save 1 cup broth. Skin chicken; remove meat; chop. Toss bread cubes with grated cheese and melted butter. Save 1/4 cup coated cubes for topping. Spoon rest into 2-quart casserole; top with vegetables and chicken.

CHEESE SAUCE:
Stir together flour, salt and pepper into melted butter or margarine in sauce pan. add milk and saved broth. Cook stirring constantly, until thickened. Melt in grated cheddar cheese.

Pour cheese sauce over bread and chicken mixture. Bake in moderate over 350º for 15 minutes; uncover, bake 10 to 15 minutes longer or until bubbly hot. Serves 6-8.
