"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 lb. Lil' Smokies (pat out moisture between paper towels so they are dry)
1 lb. bacon

Glaze:
1/3 c. brown sugar
1/4 c. SW Pennsylvania maple syrup (only the real thing)
1 T. Dijon mustard
Pinch of cayenne

Directions:
Directions:
Preheat oven to 350º
Place the Lil' Smokies in the freezer for about 45 minutes.
Separate bacon and cut into thirds; then place in freezer for 45 minutes.
Wrap a bacon piece around each Lil' Smokie & place cut side down in a 9 x 13 baking dish.
Brush glaze on each one and bake for 35 minutes.

If you want these to get good and crispy, put them under the broiler for a couple of minutes. Watch them carefully to get them to the crispiness you like. I like crispy!
Sometimes I even drizzle a little extra PA pure maple syrup on them right before they go under the broiler.
