2 lbs Yukon Gold potatoes
1 cup finely chopped kale
6 Tbs unsalted butter
1/2 cup warmed milk
1 tsp kosher salt
1/2 tsp black pepper
1/4 cup minced chives
1/4 cup crumbled bacon

Directions:
Directions:
1. Place potatoes in a saucepan and cover with water. Bring to a boil on medium-high heat. Continue to simmer 15-17 minutes, until potatoes are tender.
2. Drain water and add kale and butter to pan, covering with lid. Let rest 5 minutes. Add milk, salt and pepper to pan and mash potatoes. Stir in chives and bacon. Serve.
