1/4 c olive oil
1 c chopped onion
1 clove garlic mashed
1 1/2 lb ground chuck
1 lg can tomatoes to equal 2 lbs
2 cans tomato paste
2 Tbs parsley
1 Tbs salt and a dash of sugar
2 tsp oregano
1 tsp basil
1/2 tsp fennel seed
1/4 tsp pepper

in a large bowl combine
2 cartons of Ricotta cheese
1 pkg mozzarella cheese
1/3 c Parmesan cheese
2 eggs
1 tbs parsley
1 tsp salt
1/4 tsp pepper

I lb zitti pasta

Directions:

in a 6 qt dutch oven brown onion and garlic, add meat and brown well, drain any grease you may have,add tomatoes and tomato paste and 1 1/2 c water add parsley, salt, sugar oregano basil and fennel, and pepper. mix well mash tomatoes , bring to a boil , reduce heat simmer covered for 1 hour, stir occasionally
preheat oven to 350 º
Cook pasta as directed
Mix and beat the cheese mixture
in a five quart casserole dish spoon a little of the sauce on the bottom , layer pasta, sauce and cheese . sprinkle Parmesan cheese on top,
Bake uncovered 45 min or until bubbling in the center. 350 º....45 min
