1 green pepper cut into thin strips
3 medium carrots peeled and cut into coins
2 tbsp. (25 ml) vegetable oil
1 (14 oz/1398 ml) can pineapple chunks
2 tsp. (10 ml) cornstarch
2 tsp (10 ml) soya sauce
1 1/2 lb (1680 g) canned ham cut into strips or cubes

Directions:
Directions:
Stir fry green pepper and carrots in oil for 1 to 2 min. Drain pineapple chunks and combine juice with cornstarch and soya sauce. Add liquid to vegetable mixture along with ham and pineapple chunks. Cook over low heat stirring frequently until sauce is thickened and ham is heated through. Serve over a bed of hot fluffy rice.
