6 T butter or margarine
2 cup cooked eggplant, cubed
1 chopped onion
1 tsp. salt
1/4 tsp. pepper
1 cup milk
1/4 tsp. sage
1 cup crackers or bread crumbs
1 cup sharp American cheese, cubed
2 beaten eggs

Directions:
Directions:
Add butter to cooked eggplant. Mix until melted. Add remaining ingredients (all but eggs and milk). Beat eggs well. Add milk and pour into mixture. Bake at 350º until center rises and is light brown. 6-8 servings. Recipe doubles easily.
