1 pkg Jiffy cornbread or corn muffin mix
1 egg
1 can creamed corn
1 can green chilies OR chopped fresh jalapeno peppers

Directions:
Directions:
Add oil to cast iron skillet (or other oven-proof pan) to cover the bottom. Place skillet in 425º oven.
While oil is heating, combine beaten egg and jiffy corn meal.
Add can of creamed corn and chilies or peppers and stir to combine. Mixture will be lumpy.
Pour into hot skillet, return to oven and cook until golden on top, 20 - 30 minutes.
