2 lbs. fresh, lean ground beef
1 sweet onion, chopped
1 green pepper, chopped (optional)
1 T. ground chili pepper
1 tsp. chopped garlic
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. chili powder
1 tsp. Adobo powder

1 to 2 cans petite diced tomatoes with green chilies
1 to 2 cans pinto beans, drained and rinsed
1 to 2 cans light red kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 c. salsa
water

Directions:
Directions:
Brown the ground beef with the onion and optional green pepper and the spices in a skillet.
Pour into crock pot. Add the tomatoes with green chilies, the beans and the salsa. Stir together. Add water to desired consistency. The chili mixture will become more liquid as it cooks. Adjust crock pot temperature to high and cook for 4 hours, covered. Serve with shredded cheese and chopped fresh cilantro, if available.

The measurements for the spices are suggestions. Adjust as you like. I never add salt to this. Sometimes I add a can of prepared chili to the mixture with the beans. Sometimes I may add a pinch of sage.
