Ingredients: 2 c. King Arthur white whole wheat flour 1 c. King Arthur all-purpose, unbleached flour 1 1/4 tsp. baking powder 1 1/4 tsp. salt
4 tsp Extra Virgin Olive Oil
3/4 c.+ 2 T. very hot water (minimum of 180° F) 3 T. honey 3 T. molasses

Directions:Since this is a seminary recipe, the first four dry ingredients need to be sifted together three times. Once they are sifted together stir in the 4 tsp. oil and set aside. Mix wet ingredients together until dissolved. Add wet ingredients to dry ingredients and mix well. Dough should be slightly sticky. Do not knead. Divide into four balls and flatten each into a 1/4 in. thick disk. With a knife, score the top of each loaf into sections, I score a cross into the top of the loaf. Lay the loaves on a baking sheet. Bake at 350° F for ten minutes. Remove from oven and brush the tops of the loaves with oil. Bake an additional 5 - 8 minutes. Let cool. |

Notes: This recipe comes from Luther Seminary, and through experimentation with our altitude (approx. 6300 ft.) changes had to be made. Use olive oil for the oil, and when you mix in the olive oil with the dry ingredients you must work it thoroughly with your hands to remove clumps. At altitude use a minimum of one cup of very hot water and be prepared to add more. I use a tortilla press to flatten eight balls into 1/4 in. rounds, so that the loaves aren't too puffy.
