1 can (1 lb. 10 oz.) Hatch's whole green chilies, mild
1 lb. shredded Colby/Jack cheese
1/2 lb. shredded Cheddar Cheese
5 large eggs
1/4 c. flour
1 1/4 c. milk

Directions:
Carefully rinse chilies under cold water and remove seeds. (You can leave the seeds in if you like the chilies a little hotter.) Towel dry carefully on paper towels and open the chilies. Stuff chilies with the Colby/Jack cheese and fold back over. Arrange chilies in a 9 in. by 13 in. greased pan. Whisk eggs and milk together, gradually add flour and whisk until smooth. Sprinkle the chilies with cheddar cheese and paprika. Pour egg mixture over chilies. Bake uncovered until set at 350° F about 45 minutes.

The chilies may not open up well, but if you stuff what you can with the cheese and fold it back over, once it is cooked, you can't tell the difference. I often like to use smoked Paprika instead of the standard Paprika.
