1 1/2 lb. lean ground beef
2/3 c.cracker crumbs
1/3 c. minced sweet onion
1 egg
1tsp. salt
1/4 tsp. ginger
1/4 c. milk

1 T. shortening
2 T. cornstarch
1-13 1/2 oz. can pineapple tidbits, reserve syrup
1/2 c. brown sugar, packed
1/3 c. vinegar
1 T. soy sauce
1/3 c. green pepper, chopped in 3/4 in. square pieces
1 small sweet onion, chopped in 3/4 in. square pieces

Mix first 7 ingredients thoroughly. Shape by rounded T. into balls. Brown and cook meatballs for 20 minutes in shortening in large skillet. Remove meatballs; keep warm. Pour off fat. Mix cornstarch and sugar. Stir in pineapple juice, vinegar, and soy sauce until smooth. Pour into skillet; cook over medium heat stirring until mixture thickens and boils for 1 minute. Add meatballs, pineapple, green pepper and onion. Heat through. Serve with or over cooked Calrose rice (sushi rice).

Some may prefer no onions in the sauce. Sometimes extra liquid is needed (water or pineapple juice). Sometimes I substitute store bought meatballs instead of making them from scratch.
