Ingredients: 1 1/2 lb. lean ground beef 2/3 c.cracker crumbs 1/3 c. minced sweet onion 1 egg 1tsp. salt 1/4 tsp. ginger 1/4 c. milk
1 T. shortening 2 T. cornstarch 1-13 1/2 oz. can pineapple tidbits, reserve syrup 1/2 c. brown sugar, packed 1/3 c. vinegar 1 T. soy sauce 1/3 c. green pepper, chopped in 3/4 in. square pieces 1 small sweet onion, chopped in 3/4 in. square pieces

Directions:Mix first 7 ingredients thoroughly. Shape by rounded T. into balls. Brown and cook meatballs for 20 minutes in shortening in large skillet. Remove meatballs; keep warm. Pour off fat. Mix cornstarch and sugar. Stir in pineapple juice, vinegar, and soy sauce until smooth. Pour into skillet; cook over medium heat stirring until mixture thickens and boils for 1 minute. Add meatballs, pineapple, green pepper and onion. Heat through. Serve with or over cooked Calrose rice (sushi rice). |

Notes: Some may prefer no onions in the sauce. Sometimes extra liquid is needed (water or pineapple juice). Sometimes I substitute store bought meatballs instead of making them from scratch.
