1 large onion, sliced
4 pork chops
1 tsp. prepared mustard
salt and pepper to taste
1 can apricots

Directions:
Directions:
Brown onion lightly in fat in large covered skillet. Rub chops with mustard and season with salt and pepper. Top with onions and add half the juice from apricots. Cover the skillet and simmer on range or in 350º oven for 30 minutes. Remove cover and arrange apricots on top of chops. Cook for 30 minutes more. Serves 2-4.
