1 pkg. taco seasoning mix
1 lb. boneless, skinless chicken breasts, cut into strips
2 tbsp. oil
1 can (14 ½ oz.) no salt added diced tomatoes, undrained
1/3 cup apricot or peach preserves

Directions:
Directions:
Empty taco seasoning mix onto plate or into large plastic bag. Add chicken; toss to coat well. Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until chicken is no longer pink. Stir in tomatoes and preserves. Reduce heat to low; cover and simmer 10 minutes. Serve over rice, if desired.
