12 oz. can evaporated milk
1 ½ t salt
½ stick butter, very soft
2 – 4 T sugar
2 pkg. yeast
1 c cool water
6 – 7 c bread flour
¼ stick butter, melted

Directions:
Directions:
Scald milk. Pour warm milk over soft butter, sugar and salt; stir until melted, in mixer bowl. Add yeast and cool water. Stir in 2 ½ c. flour. Cover and let stand for approx. 25 min., until airy.

Stir in 2 ½ cups flour, ½ cup at a time. Mixer should be on level 2, using flat beater. When sides are clean, continue adding a few T at a time and incorporate completely. While still soft, turn into a greased bowl. Cover and let rise in a warm oven until doubled, 1to 1 ½ hour.

Punch down and let rest about 20 min. Divide in half. Roll out ¼ to ½ inch thick and cut into circles. Brush with melted butter and fold in half. Let rise approx. 45 min. to an hour (doubled).

Bake at 450 degrees for 10 – 15 minutes. (If freezing, bake at 425 degrees)

From the leftover dough I make cinnamon rolls. Roll the dough into a rectangle and spread with melted butter and a mixture of brown sugar, white sugar, cinnamon and a bit of salt. Roll and slice about an inch thick. Bake at the same temperature as the rolls.
