½ lb butter
½ cup powdered sugar
2 cups flour


Lemon Curd:
1 egg beaten
¾ cup sugar
1-1/2 tbs butter
3 tbs lemon juice
Rind of one lemon, grated
Powdered sugar

Directions:
Directions:
1. Combine butter, powdered sugar and flour. Mix well. Roll into small balls, slightly flatten and dent center.
2. Place on greased cookie sheet (I use parchment paper) and bake in preheated oven(350º) for 10 to 12 minutes. Remove to rack to cool.
3.In saucepan, combine all curd ingredients. Cook, stirring until thick. Cool.
4. Spoon curd into dent in each cookie and sprinkle with powdered sugar.
