Apples -- any variety; as many as fits your pressure cooker

1. Remove stems and bad spots from apples. Don’t remove skins or seeds.
2. Make sure the metal protector is in the bottom of the pressure cooker. This metal protector is typically used to keep jars off the bottom. Add enough water to cover the metal protector.
3. Fill the pressure cooker to the maximum line with apples – usually around 2/3’s to 3/4's of the height.
4. Heat the pot on high until it reaches 15 pounds pressure. This takes around 60 minutes for extra large pressure canner.
5. Moderate the heat so it stays around 15 pounds pressure. This typically involves reducing heat to medium. Cook at 15 pounds for 10 minutes. Remove from heat.
6. Cool until the air vent drops indicating the pressure has fallen.
7. Run apples through mill – removing seeds & skins.
8. Reheat applesauce & can in sterilized glass jars.
