Prime Rib Roast any size
1 teas Herbes de Provence
2 teas salt
1 teas pepper
4 garlic gloves peeled and minced
2 tbls olive oil
Au Jus
1 - 1 1/2 tbls flour
2 cups beef broth

Directions:
Directions:
Remove rib roast from refrigerator and allow to sit to room temperature approximately 4 hours.
Preheat oven to 550. Mix Herbes de Provence, Salt, Pepper, minced garlic and oil together. Spread evenly on roast and place in a shallow roasting pan fat side up.
Check weight of roast. Depending on your preference of how you prefer your roast cooked add 5 minutes per pound for RARE, 6 minutes per pound for MEDIUM and 7 minutes per pound for WELL DONE.
Ex: 5lb x 6 minutes for medium, cooking time 30 minutes at 550º
Turn off oven at the end of the cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.
At the end of the two hours, remove meat from the oven and slice.
There should be meat dripping in pan. Place on stove top at medium heat and stir flour and whisk meat drippings. When flour is dissolved add beef broth and heat until hot.
