3 medium zucchini, sliced into 1/4-inch rounds
Cooking spray
3 Tbsp. grated Parmesan cheese
1 Tbsp. chopped fresh parsley
Freshly ground pepper
Pinch of kosher salt

Directions:
Directions:
1. Preheat oven to 425°F and line a rimmed baking sheet with parchment paper (may need two pans).
2. Arrange zucchini slices on the parchment paper and spray lightly with cooking spray.
3. Mix together Parmesan, parsley, black pepper and salt. Sprinkle zucchini with Parmesan mixture.
4. Bake about 30 minutes or until cheese has melted and zucchini slices have become crisp. Serve.
