1 cup vinegar
1/2 cup juice (juice from beets)
1 cup sugar
2 Tbsp. pickling spice

Directions:
Directions:
Cook beets until tender. Drain. Save some liquid. Peel beets, cut into desired shapes. Combine above, put beets in brine, cook together about 10 minutes and put into jars.

Seal.
