2 - 8 oz. packages cream cheese, softened
8 c powdered sugar
2 t vanilla extract
⅔ c butter, softened
¾ c flaked coconut, if desired
¼ c chopped pecans, if desired

Directions:
Directions:
Mix cream cheese, powdered sugar, vanilla and butter in large bowl at low speed of electric mixer until ingredients are well combined. Beat at high speed until light and fluffy. This should be enough icing to frost the "Italian Cream Cake."
