2lbs Pork (Back) Spareribs (usually this means 3 large racks)
1C Brown Sugar (light and packed)
1/2C Chili Sauce
1/4C Ketchup
1/2C Dark Rum
1/4C Soya Sauce
1T Worcestershire Sauce
1t Dry Mustard
4 Garlic Cloves (crushed)
1/8t Freshly Ground Pepper

Prep the Ribs
1. Preheat the oven to 350ºF
2. Cut spareribs into individual pieces.
3. Line a roasting pan with double layers of aluminum foil
4. Place ribs in pan and tightly seal the foil around the pan. Bake for 2 hours.
The Sauce
5. Combine all remaining ingredients in a bowl and mix well.
Baking the Ribs
Preheat the oven to 400º
4. Unwrap the baked ribs, pour off liquid and pour the sauce over the ribs - spreading evenly and making sure all ribs are covered in sauce.
6. Bake for 2 hours - stirring frequently to make sure all ribs are covered in sauce as the sauce thickens.
