Mom's Zucchini Casserole Recipe

2 medium zucchini
1/3 cup shredded carrots
1/4 cup chopped onions
3 T butter
1 1/4 cup Herb Stuffing ( must be cubed )
1/2 can cream of Chicken Soup
1/4 cup sour cream

Directions:
Directions:
Cook zucchini until tender...drain...set aside
Cook carrots, onion and butter in sauce pan until tender
Remove from heat
Stir in 3/4 cup stuffing cubes, soup and sour cream...gently stir in zucchini
Put in a greased casserole
Melt remaining butter ( 1 T ) and stuffing
Toss and put on top of casserole
Bake 350 degrees. 30-40 minutes
