Pot Roast:

3 or 4 pounds beef pot roast (Season and brown all sides in a small amount of oil)
1 cup apple cider
2 tbsp sugar
1/4 tsp cinnamon
1/4 tsp ginger
3 whole cloves
1 1/2 cups sliced onions
12 dried apricots and 12 prunes

Gravy:
1/4 cup cornstarch
Liquid from soaked fruit

Pot Roast:
1. Season and brown on all sides of pot roast in a small amount of oil.
2. Combine apple cider, sugar, cinnamon, ginger, and whole cloves. Pour over meat.
3. Add sliced onions and cover. Simmer 2 1/2 hours or until tender.
4. Meanwhile, soak dried apricots and prunes. Drain and add fruit 30 minutes before meat is done. Set aside liquid from soaked fruit for gravy.

Gravy:
1. Take the liquid from soaked fruit and add cornstarch. Stir well and pour in liquid in the pot roast (if it is not thick enough, make a little more by adding water and cornstarch).
