1/2 cup unsalted butter, melted
1/2 cup light brown sugar, packed lightly
1 cup all purpose flour
1/2 tsp coconut extract

Filling: 6 oz fresh raspberries
2 lg eggs
1 c sweetened shredded coconut
1/3 c light brown sugar, lightly packed
1/4 c all purpose flour
1/4 tsp salt
1 TBS fresh lemon juice

Topping: 1 C shredded coconut

Set oven 350 degrees.

Mix melted butter and brown sugar together, using back of spoon to break up and lumps in sugar. Mix in flour and coconut extract.

Spread crust evenly over " 10x10" baking pan. Grease or line pan with parchment.

Bake for 12-15 min, remove/set aside to cool.

Rinse/dry raspberries. Beat eggs, mix in all the rest of filling ingredients EXCEPT raspberries.
Fold in gently, until incorporated. Spread filling into warm crust. Spread out evenly to cover crust. Sprinkle remaining coconut over filling. Bake 25-27 minutes, until lightly golden.

Cool before cutting.

These bars are outstanding. I recommend using fresh raspberries. Occasionally, I will sprinkle in a few blackberries and blueberries if I have them, but only a few.
