2 grapefruit
2 lemons
You can use any combination of fruits you wish.
1/4 tsp. baking soda
4 1/2 cups white sugar
1 box certo crystals
1/2 tsp. butter

Wash fruit and simmer in enough water to just cover for about 1 hour.
Remove fruit and cool. Reserve 4 cups of sugar, to use later.
Peel and cut up fruit removing some of the membrane.
I take some of the peel and try to just use the outside coloured part and not the white pith (which is bitter). I usually don't use all the peel - just enough to have 4 cups with pulp.
Put the peel and the pulp into a food processor and blend until finely chopped.
You will need 4 cups of prepared fruit. You can use some of the water you cooked the fruit in if you don't have 4 cups.
Mix 1/2 cup of the sugar with Certo crystals. Blend well and combine with fruit, 1/2 teaspoon butter and baking soda in a large heavy saucepan or dutch oven. Heat until fruit peel is just getting soft (not mushy) and the mixture is boiling. Stir frequently.
Add the sugar and stir constantly. Bring to a boil.
Boil hard for 1 1/2 - 2 minutes. Remove from heat.
Stir every few minutes to keep fruit well combined. While still hot seal in small (1 cup) mason jars that have been scalded. If it doesn't seal you can freeze or store for a few weeks in fridge.

Mom always made marmalade with ripe citrus fruit we may have had for a while or reduced for quick sale fruit.
I remember as kids we had to grind it in food chopper, before we had a food processor. You can add more sugar, but I prefer it rather tart.
