Cake:
1 box yellow cake mix
4 sggs
1 cup frozen strawberries (thawed)
1 cup chopped pecans
1/2 cup milk
1 cup vegetable Oil
1 cup coconut (optional)
1 can pie filling (strawberries or cherries), chilled

Frosting:
2 of 8 oz Cream Cheese, softened
1 cup Regular Sugar
1 tsp Vanilla
1 large (12 oz) Cool Whip

Cake:
1. Preheat oven to 350º.
2. Add all ingredients to a mixing bowl except pecans, strawberries, and coconut (if used). Beat until smooth. Add other ingredients. Bake in greased and floured pans. Can use 3x4 or 9x13 pans. Also can be baked as a sheet cake. Bake until cake draws away from sides of pan. Cool and frost.

Frosting:
1. Beat with mixer in order given.
2. Frost cake - on top layer, build icing up around the edges to hold 1 can strawberry pie filling that has been chilled. I use a decorator to put icing in to build up the edges and let pie filling dries a little down sides of cake.
