Miniature Quiches Recipe

1 3 oz cream cheese
1 stick butter
1 cup flour

1/2 cup chopped onion
1/2 cup grated Swiss cheese
2 eggs
1/2 cup light cream
pinch of nutmeg
pinch of pepper

Crust: blend cream cheese and butter, add flour. Refrigerate until firm Divide into 24 balls and press into miniature muffin pans. Refrigerate while preparing filling.

Filling: saute onions in butter until limp and brown. Grate the cheese. Mix the eggs and cream together until smooth. Add the nutmeg and pepper.

Into each crust divide cheese and onions equally. Fill to top with egg-cream mixture. Bake 15 minutes at 400 and then 15 minutes at 300, let cool 20 to 30 minutes. Run knife around edge of crusts and remove from tins. May be frozen and reheated at 225 until hot and crisp.
